Arnavut Ciğeri, Sauteed Fruit,& Onions w/ Potato Mash

SERVE 4

MASHED POTATOES;
300 gr potatoes
50 gr butter
60 gr milk 
60 gr cream 
salt,pepper
2 springs of thyme
1/2 spring of rosemary

1.Cover the potatoes with cold water,

Add the salt, pepper, thyme, rosemary

2. In a separate pot, warm the milk, cream , butter

ARNAVUT CİĞERİ;
200 gr whole Liver (preferably milk sheep's liver)
100 ml milk
1/2 apple sliced
1/2 pear sliced 
salt, pepper, cinnamon
30 ml brandy (whisky, liquor .. all can be used)

1.Soak the liver in the milk for at least an hour

2.In a saute pan , sear the liver to medium rare. While the liver is resting , in the same pan caramelize the onions.

3. When the onions start to often, add the apples, pears and sautee for 3-4 minnutes.

4. Add the brandy , flambe, adjust consistency and seasoning .
